Sauté the onions in butter and oil, then add chopped mushrooms and fry gently until they soften. Add garlic, followed by the barley. Turn this over in the mushroom mix for a minute or two, then add the stock, stirring all the time. Lastly add the wine or cider. Bring to a simmer then cover with a lid and cook for around forty minutes in a moderate oven. Check towards the end of cooking and add more liquid if necessary. Before serving, grind in some pepper and stir in the parmesan. Garnish with shreds of wild thyme.
